Cool Cucumber Pasta Salad

From my friend Sheila Rose Schroeder ......Karla, this is one of my favorite and most requested recipes. It is the perfect summer salad, but I love it any time of year.

Cool Cucumber Pasta Salad

8 ounces penne pasta
1 Tbs. vegetable oil
2 medium cucumbers, sliced very thin
1 medium onion, sliced very thin (I cut the onion in half first)
1 ½ cups sugar
1 cup water
¾ cup cider vinegar
1 Tbs. prepared mustard
1 Tbs. dried parsley flakes
1 tsp. salt
1 tsp. pepper
½ garlic salt

Cook the pasta according to package directions; drain and rinse in cold water. Place in a large bowl; stir in oil, cucumbers and onion. *This is a very important step, to mix the oil with these ingredients until well coated.

Combine the remaining ingredients; pour over salad and toss. Cover and chill for 3-4 hours, stirring occasionally. Serve with a slotted spoon.

Sheila also wrote,   Karla, here is a website & FB page you (and others) may enjoy. She is very well known and followed here in SE Idaho. She even published a book (available on Amazon) called 'The Zucchini Houdini.' When she was a newscaster in Pocatello for several years, they had her on a cooking segment. They also publish her recipes in the Pocatello paper. and I think of you when I see them. It is: Tales of the Dinner Belle. For the website, just add .com

Cucumber Salad

Cucumber Salad

5 large cucumbers, peeled and sliced very thin

1 large onion, peeled, sliced very thin, and separated into rings

3/4 cup whole milk

1/4 cup white vinegar

3/4 cup mayonnaise OR Miracle Whip

1/4 cup sugar (*omit if using Miracle Whip)

1/4 cup fresh, chopped dill OR 2 Tablespoons dry dill

salt and pepper, to taste

Mix all ingredients in a large bowl until evenly combined. Cover and refrigerate for at least two hours or until very cold. This salad will keep, covered in your refrigerator, for 5 days.

Note: If you decide to make this salad with mayonnaise, add the 1/4 cup sugar. If you use Miracle Whip, omit the sugar, or use less. Miracle Whip is much sweeter than regular mayonnaise. Or you could use sour cream.

Cucumber Tomato Salad & Tomato Basil Bread

Tonight is Garden Club at my house and the focus is on Tomatoes!!  I am making this to share....

Cucumber Tomato Salad
For the salad:
Approximately 3 cups peeled & sliced cucumbers
3 cups of Juliet & Sun Sugar tomatoes or whatever you have
1/3 c. chopped red onion
1/4 c. chopped fresh basil (I used sweet basil and lime basil)
For the dressing:
1/4 c. extra virgin olive oil
3/4 c. apple cider vinegar
1/2 T. red wine vinegar
1/2 t. dill weed
1 t. sugar
1/2 t. salt
1/4 t. pepper

Place salad ingredients in large bowl and toss.
Mix dressing ingredients in small bowl; stir to combine well & drizzle over salad.
I kept the dressing separate.

TOMATO BASIL BREAD
1/2 c. warm milk - microwave 30 seconds
1/2 c. pureed ripe tomatoes (blend in blender with the garlic & herbs)

2 T. fresh basil, minced
1 T. fresh chives, minced
2 cloves garlic, minced
1 t. fresh oregano, minced
1 egg
2 T. oil
1/2 t. salt
1 T. sugar
3 c. slightly rounded, bread flour
1  T. yeast
GARLIC CHIVE SPREAD
1/2 c. butter, softened
1 T. fresh chives, minced
1 garlic clove, minced
Place bread ingredients in bread machine pan in order listed.   Check dough after 5 minutes of mixing, add 1 to 2 T. water or flour if needed.  Bake in bread machine or remove dough, form into 2 artisan loaves and bake in oven at 375 for 20 minutes.
In bowl, combine spread ingredients. Serve with bread.

I also used this dough to make pizza crust.  It made enough for a cookie sheet and a half sized cookie sheet.  I sprayed the pans.  Patted out the dough and baked it at 375 for 10 minutes.  Then I used 16 oz. tomato sauce, Italian Seasoning, garlic powder, onion powder, basil, oregano, salt & pepper for my sauce.  Sprinkled with cheese and canadian bacon and basil or pizza seasoning.  Baked 15 more minutes.  It turned out great!!  And the tomato lovers garnished it with fresh sliced tomatoes.

** So I can make this all year round I puree my tomatoes and herbs together and freeze them in little jars.

Creamy Cucumber Salad

I have a similar cucumber salad recipe that I love...however, the cucumbers go mushy after an hour or so.  I think this recipe just may have a cure to me..... YAY!!!

Creamy Cucumber Salad
1 medium red onion (roughly diced)
2 medium cucumbers (peeled, sliced 1/2 in thick & halved)
1/2 green pepper (thinly sliced & cut in 1 in strips)
2 large tomatoes (seeds removed & diced)
2 tablespoons white vinegar
1/2 cup mayonnaise
1 tablespoon dried parsley flakes
4 tablespoons granulated sugar
1 teaspoon seasoning salt (more to taste as desired)
1 teaspoon dried dill

Peel & slice cucumbers in 1/2 in thick slices. Then half ea slice & transfer all slices to a lrg mixing bowl (See note). Roughly dice red onion & add to the bowl. Quarter tomatoes, remove seeds, rough dice the tomato “meat” & add to the bowl. Thinly slice 1/2 green pepper, cut slices in 1 in strips & add to the bowl. Toss prepared “veggies” to achieve a good distributional mix. Add last 6 ingredients to bowl, mix well & refrigerate at least 2 hrs (stirring at least once to redistribute ingredients).
Notes: The cucumber cut is esp important. If thinly sliced, most cucumbers wilt & do not retain their crunch. — When all ingredients have been combined, the mixture will appear dry & lack a creamy texture or appearance. DO NOT PANIC – that will begin to change almost immediately.

Sweet & Sour Cucumbers

I clipped this recipe out of a farming newspaper years ago.  I have never tried it because I never seem to find it when all the cucumbers are growing in my garden.  This year it is going to be here waiting when my cucumbers are ready.

Sweet & Sour Cucumbers/Salad
2 large cucumbers, peeled and thinly slices
3 green onions, thinly sliced with 3 inches of green tops
2/3 c. rice vinegar
1/2 c. sugar
Combine all ingredients; marinate for at least 1/2 hour.  With a slotted spoon, serve as a salad or garnish.

Serves 4 - one serving = 47 calories

Creamy Cucumber Salad

I am always interested in another cucumber recipe.  I never seem to get tired of cucumbers and I've yet to find a cucumber recipe I don't like.  I think this will be pretty with my solid red radishes that I have growing in my garden.  I hope the radishes and cucumbers are ready at the same time.
Creamy Cucumber Salad
2 medium cucumbers, peeled and thinly sliced
2 t. salt
2/3 c. plain non-fat yogurt
1 t. lemon juice
6 radishes, thinly sliced
1 t. chopped dill
Toss together the sliced cucumbers and salt in a colander. Let stand to drain for 45 minutes. Press the excess water out of the cucumbers and pat dry. Place in a bowl.
Add the yogurt and lemon juice and toss well. Stir in the sliced radishes and chopped dill. Serve chilled.

Peel and slice the cucumbers and put them in a glass bowl. Sprinkle them with salt and vinegar. Cover and let stand for 30 minutes. Pour off the excess liquid and drain in colander for about 30 minutes to allow complete drainage. Add the mayonnaise, sour cream, dill and pepper, and mix well. Cover and refrigerate until serving time.

Sweet & Sour Cucumbers

Years ago I cut this recipe out of a newspaper.  It has been sitting by my computer since last summer....but I never remember to post it.  On Tuesday Steve & I met my sister, Janet and husband, Vaughn for dinner at Tucanos.   Janet and Steve share the same birthday and so we went to use their birthday coupons.  I really enjoyed the cucumber salad they serve.  I'm thinking this recipe is really similar.

Sweet & Sour Cucumbers
2 large cucumbers, peeled and thinly sliced
3 green onions, thinly sliced, with 3 inches of green tops (I think red onion would be good too)
2/3 c. rice vinegar
1/3 c. sugar
Combine all ingredients:  marinate for at least half an hour.  With a slotted spoon, serve as a salad or garnish.  Serves 4.

hmmmm......2 cucumber salad posts in December......I think I'm missing summer!!

Creamy Cucumber Salad

Yesterday I had on the Food Network  while I was tying a quilt. "Barefoot Contessa" made this Cucumber Salad which is very similar to my Favorite Cucumber Salad.  She however drained her cucumbers and yogurt for 4 hours.  This removes all the liquid that makes this salad go runny if you don't eat it all within an hour or so.  The secret is too marinate the cucumbers with about 1 1/2 T. salt which releases the liquid.  I'm so gonna try this with my recipe too.  But here is her recipe.
http://www.foodnetwork.com/recipes/ina-garten/creamy-cucumber-salad-recipe/index.html

Creamy Cucumber Salad

  • 4 hothouse cucumbers, thinly sliced (3 to 4 pounds)
  • 2 small red onions, thinly sliced in half rounds
  • Kosher salt
  • 4 cups (32 ounces) plain whole-milk yogurt
  • 1 cup (8 ounces) sour cream
  • 2 tablespoons champagne vinegar or white wine vinegar
  • 1/2 cup minced fresh dill
  • 1 1/2 teaspoons freshly ground black pepper

Directions

Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl. Pour them into a colander and suspend it over a bowl. Wrap the bowl and colander with plastic wrap, and place in the refrigerator to drain for at least 4 hours or overnight. Discard the liquid that collects in the bowl.
Pour the yogurt into a sieve lined with a paper towel and suspend it over another bowl. Wrap the bowl and sieve in plastic wrap and refrigerate for at least 4 hours or overnight. Discard the liquid that collects in the second bowl.
When the cucumbers are ready, roll them up in paper towels or a kitchen towel and press the towel lightly to remove most of the liquid. Place the cucumbers and yogurt in a large bowl with the sour cream, vinegar, dill, 2 teaspoons salt, and the pepper. Toss well and refrigerate for a few hours to allow the flavors to blend. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper and serve chilled.
Now I can't wait for summer again!!

Karla's Pasta Salad

Well I have been wanting a pasta salad recipe that uses cucumbers but won't go soggy or runny and will keep for a few days.  So I have been experimenting and I think I have come up with a good combination of flavors for this amazing summer salad.  Since my favorite pasta salads are all titled by the name of the person who gave them to me I decided I would name this one after me.

16 oz. bowtie pasta or pasta of choice
3 or 4 cucumbers, bite sized pieces
1 red onion, julienne
2 red peppers, julienne
2 T. each - Fresh parsley, chives and dill, finely chopped
Dressing
1 c. Miracle Whip
1/2 c. milk
2 T. lemon juice
2 T. sugar
1 t. each - salt, celery seed, dill weed
1/8 t. pepper
Cook pasta according to package directions, making sure to not overcook.  Rinse pasta and drain well.  Stir together in large bowl; the pasta, vegetables and herbs.  Refrigerate until well chilled.
Stir together the dressing ingredients and refrigerate.  Shortly before serving time stir the dressing into the pasta mixture.  Serve.

Sweet & Spicy Cucumber Salad

This is the simplest of summer salads.  Cucumbers have always been one of my favorite vegetables, with striped Armenian cucumbers being my absolute favorite variety.  This simple cucumber side dish would be a perfect accompaniment to grilled meat or fish, but I usually eat it as an afternoon snack.
Sweet and Spicy Cucumber Salad
1/4 cup rice vinegar
1 tablespoon sugar
pinch of crushed red pepper (to taste) (OR a dash of black or white pepper)
pinch of salt (to taste)
2 tablespoons chopped fresh dill
2 medium cucumbers (peeled if desired), thinly sliced
Whisk together vinegar, sugar, crushed red pepper, and salt until the sugar is dissolved; whisk in chopped fresh dill.  Place sliced cucumbers in a bowl and pour dressing over them.  Toss well with a spoon until all of the slices are coated with dressing.  Cover and refrigerate for at least 30 minutes; stir once or twice while it is marinating.  The salad can also be made ahead and refrigerated overnight.
