Comfort Breakfast Bake

Comfort Breakfast Bake (recipe from Rocking Lion & facebook)
5 eggs
1/4 cup milk
16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind)
4 scallions (green onions, spring onions, whatever you prefer to call them)
1 cup shredded extra sharp cheddar cheese
If you’re into the meats – cooked center cut bacon or cooked sausage
11×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but it might need to bake a little longer)
Mix your eggs and milk in a large bowl. Cut each biscuit (I’m all about scissors in the kitchen) into fours and add it to the bowl. I like to do this before I cook the bacon or cut up the scallions – give the biscuits some time to really soak in the eggs.
Cut up your scallions, shred your cheese, cook and break up your bacon (or sausage). Add everything to the bowl.
Mix it all up and pour into your pan. Bake at 350 for 25 minutes (make sure it isn't runny – mine this morning took 28 mins).

Breakfast Cupcakes

This is an easy & cute dish to prepare.   A great dish to serve on a buffet table, as each individual serving can be picked up and popped on a plate.

BREAKFAST CUPCAKES1 20 ounce package pre-shredded hash brown-style potatoes
2 large eggs, lightly beaten
4 tablespoons flour
1 small sweet onion, coarsely grated
2 thick slices deli ham, chopped into small bits (about 1 cup)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and freshly ground black pepper to taste
1 dozen eggs, scrambled
chives for garnish

Preheat the oven to 400 degrees F., and lightly spray a 12-cup muffin tin with non-stick cooking spray. Mix the first eight ingredients together in a large bowl. Spoon potato mixture into each prepared muffin cup until about 1/3 full. Gently press the potato mixture down in the middle and up the sides of each cup. Bake until golden brown, about 25-30 minutes. If the nests have puffed up too much in the center, scoop out a little with a teaspoon. Spoon a few tablespoons of scramble eggs into each nest and top with chives.

Creamy Deviled Eggs

We love deviled eggs at our house. I don't really measure anything but this is what I make them with.....

Creamy Deviled Eggs

  • 2 or 3 dozen hard boiled eggs
  • Miracle Whip Salad Dressing
  • Dill pickle juice - (can add chopped dill pickles too, but these won't go through a decorating tip too well)
  • Mustard
  • Salt & Pepper & Paprika

Cut eggs lengthwise and remove the yolks. Smash the yolks with a fork and add all the other ingredients to taste. Stir well and be sure to make it very creamy....you don't want a dry egg. Fill a pastry bag or ziploc bag with the mixture and squeeze it back into the center of each egg white. Chill and serve.  Sprinkle additional paprika over the top at serving time.

This year I saw a post on pinterest where they sliced the eggs crosswise about 2/3 from the top of the egg. They over filled the egg back up and put the top back on leaving a gap in the front. Added eyes (chopped olive) and a beak (triangle slice of carrot)....they looked like cute little chicks hatching out of the egg. We tried it....But it really was a pain to try to decide where to cut them so you could get the yolk out...then it was harder to get the yolk out.....and so we decided it was just better to make traditional ones.
Lacey did a really nice job!

Chive Infused Ham and Cheese Oven Omelet

Nothing says breakfast like Ham and Cheese and Eggs…..this omelet says it all….fast, delicious, impressive, moist, flavorful, sure to please, serve it anytime you want kind of dish.
My newest creation; made especially for my omelet loving Husband and shared with you at his request!   Fresh chives are the perfect compliment; bringing all the flavors together in a subtle way.
Philadelphia cream cheese keeps this omelet moist and the blender mixes it perfectly. I can have this mixed and in the oven in less than 5 minutes..  It is perfect for those times when you need a delicious impressive dish but you don’t have much time to spend in the kitchen.   If you have a crowd to feed; simply double the recipe and bake it in a 9x13 inch baking dish.

Chive Infused Ham and Cheese Oven Omelet
2 T. Butter, melted in baking dish
 4 oz.  PHILADELPHIA cream cheese
½ c. milk
10 eggs
1 t. salt
1/8 t. pepper
1 c. thinly sliced ham, diced
¼ c. fresh chives, snipped (plus 1 T. for garnish)
1 c. cheddar cheese, grated
Place butter in (7 x 11 inch oval or 8 x 8 inch square) casserole dish while oven preheats to 325.  Remove casserole dish from oven as soon as butter has melted and tilt the dish to coat bottom with butter.
Place in blender; the PHILADELPHIA cream cheese and milk.  Blend for 10 seconds on high speed.   Add the eggs, salt and pepper and pulse blender 5 – 6 times.  Add the diced ham and snipped chives and pulse 2-3 times.
Pour mixture into the casserole dish and bake about 35 minutes; until the eggs are set, but still moist.  Top with grated cheese and more snipped fresh chives and bake about 5 more minutes; just until cheese is melted.  Serve immediately.

Ultimate Oven Omelet

This is a great Easter or Christmas Brunch recipe as it bakes while you enjoy time with your family.  The perfect one dish breakfast because no one is stuck in the kitchen for hours.  I usually chop up the vegetables and meat ahead of time and then it only takes a few minutes to put it all together.  Serve with a hot biscuit,  muffin or toast and your favorite fruit tray or juice.  It is great for a crowd, two of these will fit in most ovens.  You can change the meats and vegetables according to everyone's taste.  I often serve this with fresh salsa.  Enjoy!

Ultimate Oven Omelet
1/4 c. butter or margarine

18 Eggs
1 c. sour cream
1 c. milk
2 t. salt
1/4 t. pepper
1/4 c. chopped, green onions
1/2 c. chopped, cooked ham or bacon
1/4 c. chopped, red peppers
1/4 c. chopped, green peppers
1 c. grated, cheddar cheese

Heat oven to 325. In oven, melt butter in 9x13 inch glass baking dish.  Tilt dish to coat bottom with butter.
In large mixing bowl, beat:  eggs, sour cream, milk, salt & pepper.  Stir in onions, meat and peppers.  Pour into baking dish and bake until eggs are set but still moist, about 35 minutes.  Remove from oven and sprinkle the grated cheese over the top.  Cover with foil and allow to stand for about 5 minutes to melt the cheese and allow the eggs to set up.
