Lemon Pound Cake.........in honor of Connie

Dec. 3, 2020 = Today is our first year of celebrating Connie Lee Atkinson's birthday without her on this earth to celebrate with us. My how we miss her! Yesterday, her daughter Lindsey sent out this recipe, that was one of Connie's favorites, with a challenge to make it today to "Celebrate Connie".  So I thought I would share it here, complete with Connie's own version of the glaze.  

Lemon Pound Cake 
1 Lemon cake mix
1 small box lemon instant pudding
4 eggs
1 c. water
1/2 c. oil
Glaze (Connie's Version)
2 c. powdered sugar
1 T. water
1 T. butter
1/3 c. lemon juice
Place all ingredients in the mixer bowl.  Beat at medium speed for 2 minutes.  Pour into a sprayed bundt pan.  Bake at 350 for 45 to 55 minutes.  Cool for 20 minutes in the pan before moving onto plate.  
For the glaze, heat ingredients in a sauce pan and pour over HOT cake.
