Sue's Chex Mix

 Sue Grunig brings this sturgeon fishing every time!!  It is one of our favorite snacks while playing games.  She shared the recipe so now I can have it whenever I want.  

Sue's Chex Mix
In a large bowl mix:
6 c. rice Chex
6 c. corn Chex
1/2 - 1 c. sliced almonds
1 c. ribbon coconut, unsweetened
Combine in saucepan:  
1 1/2 c. corn syrup
1 1/2 c. sugar
3/4 c. butter
Bring to a boil and boil for 2 minutes.  Pour over the Chex mixture.  Stir well.   

Sue often just uses 12 c. Rice Chex instead of part corn Chex.

Caramel Puff Corn

 My friend Linda Murray makes this and shares it often.  Katie makes a version of it that is really gooey and delicious.  If you don't want to get your hands sticky this version is for you.  

Caramel Puff Corn
20 c. puff corn
1 1/2 c. brown sugar
1 c. butter
1/2 c. light corn syrup
1 t. salt
1 T. vanilla
1 t. baking soda

Preheat oven to 200.
Place puff corn in a large roasting pan.  
Combine brown sugar, butter, corn syrup and salt into a 3 qt. saucepan.  Cook of medium heat, stirring occasionally for 8 to 10 minutes or until it comes to a full boil.  Continue to cook stirring occasionally for 5 minutes.  
Remove from heat and stir in vanilla and baking soda.  
Carefully pour over the puff corn.  Stir well and bake for 1 hour, stirring every 15 minutes.
Immediately pour out onto waxed paper.  Cool completely.  Break into bite-sized pieces.  Store in covered container.  

Hard Candy

Back in the old days,Lori Stiles and I would get together and make candy.  This recipe was from a Charlie Brown cookbook and it was called "Lucy's Lemon Lollipops".  Below is a picture of how we made them before the days of sucker molds.  The twins asked me if I could make some hard candy for Christmas this year.  So, I did some experimenting to come up with a microwave version so I didn't have to stand at the stove stirring for 20 to 30 minutes.  Here it is.....


Hard Candy
Mix together in a microwaveable 8 c. measuring bowl:
1/2 c. corn syrup
1 c. sugar 
Cover with plastic wrap microwave for 3 minutes on High.  Remove plastic wrap carefully.  
Stir quickly and cover with a new sheet of plastic wrap and microwave for 2 more minutes.  
Carefully remove the plastic wrap and stir in:
1/2 to 1 t. flavoring (lemon, orange, root beer extract)  If using flavored oil it only takes a small amount.
Pour into sprayed molds or onto a sprayed cookie sheet.  
Let cool and about 20 minutes and then remove from molds or break into pieces.  

Hints:
Have all your supplies ready before your start.
A sprayed wooden spoon works best for stirring.
I like to shake the candy pieces in a baggie with 1 to 2 T. powdered sugar. Shake off excess.  This keeps it from sticking together.  
Microwave cooking times may vary due to the wattage of your microwave (mine is 1000 watts).

Golden Grahams S'mores

Diane Brinkerhoff shared this Betty Crocker recipe with us on the 4th of July.  It is very addicting and messy!!  But so worth it!

Golden Graham S'mores
8 c. Golden Grahams™ cereal
5 1/2 c. miniature marshmallows, divided
1 1/2 c. milk chocolate chips
5 T. butter or margarine
1/4 c. sugar
1 T. water
1 t. vanilla
Grease 13x9-inch pan with butter. Measure cereal into large bowl.
Reserve 1 cup of the marshmallows. In 3-quart saucepan, heat remaining 4 1/2 cups marshmallows, the chocolate chips, butter, sugar and water over low heat, stirring occasionally, until completely melted. Remove from heat; stir in vanilla. Pour marshmallow mixture over cereal in bowl; stir until evenly coated. Stir in remaining 1 cup marshmallows.
Press firmly in pan. Cool at least 1 hour until firm. For bars, cut into 6 rows by 4 rows. Store loosely covered at room temperature.

For the Microwave:
Grease 13x9-inch pan with butter. Measure cereal into large bowl. Reserve 1 cup of the marshmallows. In large microwavable bowl, microwave remaining 4 1/2 cups marshmallows, the chocolate chips, butter, sugar and water uncovered on High 2 minutes to 3 minutes 30 seconds, stirring after every minute, until melted and smooth when stirred. Stir in vanilla. Continue as directed in recipe.

Hints:
If you spray your bowl with cooking spray before using it, you'll have less mess to clean when you're done.
The sugar and water can be replaced with 1/4 cup corn syrup.
If you prefer your marshmallows more visible in the bars, just a wait a minute or two after mixing the warm chocolate and marshmallow mixture into the cereal to allow it to cool slightly before you stir in the final cup of marshmallows.

Reese's Fudge

Reese's Fudge

Peanut Butter Layer
1 c. butter, melted
1 pound powdered sugar
1 1/2 c. creamy peanut butter
1 1/2 c. graham cracker crumbs (about 1 sleeve)
Topping
12 oz. milk chocolate chips
1 1/2 c. creamy peanut butter

In a large bowl mix together all of the ingredients for the peanut butter layer. Press into 13x9 inch baking pan. Chill for 1 hour.
Place chocolate chips and peanut butter into a bowl. Microwave for 1 minute. Stir until melted and smooth. Pour over peanut butter layer. Chill for 2 hours, until firm.
Store in fridge.

EASY Microwave FUDGE

Easy Microwave Fudge
Stir together and Microwave for 1 min on high:
1 can sweetened condensed milk
3 c. milk chocolate chips
Stir until creamy. 
Pour into a foil lined and sprayed 8x8 pan.  Chill in fridge for 2 hours.  Remove from pan and cut into pieces.

Almond Roca

Almond Roca
1½ cups coarsely-chopped almonds
16 oz. light brown sugar
1 lb. butter
24 oz. milk chocoalte chips

Sprinkle ¾ cup coarsely chopped almonds onto the bottom of an 18x13 inch cookie sheet. Set aside.
In a 2 qt. sauce pan, combine sugar and butter over medium high heat while stirring frequently for several minutes unit bubbly and thick. Use a candy thermometer and cook until 290 degrees F. Watch carefully after 280 degrees F to prevent it from burning. Once it has reached 290 degrees F, remove from heat.
Pour candy evenly on top of the almonds in cookie sheet. Let stand for a few minutes.
Melt chocolate chips in microwave with 1 tsp. shortening or oil to help keep it smooth. Microwave in 30 second increments, stirring each time, until melted and smooth.
Cover candy with layer of chocolate and sprinkle remaining almonds evenly over the top of chocolate layer.
Allow to set up, takes few hours. Place in the fridge to cool faster.
Once completely set up and hardened, break into pieces using a knife.
This recipe makes about 2 lbs of candy and is great for gifts!

Chocolate Chip Cookie Dough Truffles

Chocolate Chip Cookie Dough Truffles
½ c. butter, room temperature
¾ c. packed brown sugar
1 t. vanilla
2 c. all purpose flour
1 can (14 ounces) sweetened condensed milk
½ c. semi-sweet chocolate chips
½ c. finely chopped walnuts or pecans
1 pound dark chocolate candy coating

In a bowl combine butter and sugar on medium-high speed until light and fluffy, about 2 minutes.
Beat in the flour, sweetened condensed milk and vanilla until incorporated, beating well after each addition.
Stir in chocolate chips and walnuts.
Cover with plastic wrap and refrigerate for about 1 hour, or until firm enough to handle.
Shape mixture into 1 inch balls by rolling a spoonful in the palm of your hand, since the dough is sticky, roll your fingers into flour. This will make it easier to roll.
Place on waxed paper-lined baking sheets. Loosely cover and refrigerate for 15-20 minutes or until firm again.
In a bowl melt dark chocolate candy coating.
Dip the cookie dough balls into the chocolate and place on parchment paper.
Let the truffles sit until hard, about 15 minutes.
Once set, remelt remaining candy coating.
Place in a small baggie and cut a small hole in one corner.
Carefully drizzle chocolate over truffles.
Store in the refrigerator and serve cold. These can also be frozen for longer storage.

Christmas = Caramel Cravings

Here is my handout from a class I taught recently with my favorite Caramel Recipes.  

CHRISTMAS = CARAMEL CRAVINGS   
Much faster…..but just as tasty as one of my old time favorites. 
7 MINUTE CARAMELS
Combine in a 2 quart bowl:
1/4 c. butter
1/2 c. sugar
1/2 c. brown sugar
1/2 c. light corn syrup
1/2 c. sweetened condensed milk
Microwave on high for 2:22 minutes 3 times stirring every 2:22 minutes, for a total of about 7 minutes. Pour into buttered 8 x 8 glass pan.  Cool. Cut. Wrap individually in waxed paper. 
OR
14 MINUTE CARAMELS = a double batch (TO USE THE WHOLE CAN OF SWEETENED CONDENSED MILK AND TO HAVE TWICE AS MANY CARAMELS!!)  Use a 4 qt. bowl – double all the ingredients – Microwave 3:33 minutes 4 times stirring every 3:33 minutes, for a total of about 14 minutes. – Pour into a buttered 9x13 glass pan. 

HINTS:  To test the caramels to see if they have cooked enough – pour a spoonful of caramel into a cup of ice water. 
When cutting caramels use a plastic knife or kitchen shears. 

GIFT IDEAS – wrap in waxed paper and toss into a lunch sack or wrap in TP rolls or make a paper plate basket. 

ADDITIONAL USES ….
NO MESS CARAMEL APPLES ….. Cut an apple in half, core it and hollow it making a nice sized cavity, pour the caramel into this cavity, when caramel has set up, cut into slices and serve.....

TURTLES ..... Pecans, caramel and chocolate

PRETZEL STICKS …. dip in caramel and drizzle or dip in chocolate

6 MINUTE CARAMEL SAUCE
1/4 c. butter
1/2.c. sugar
1/2 c. brown sugar
1/2. c. light corn syrup
1 can sweetened condensed milk, divided
Place first 4 ingredients and 1/2 of the sweetened condensed milk in a 2 qt. glass measure and stir well. Microwave for 2 minutes 3 times stirring every 2 minutes, for a total of 6 minutes. Stir in remaining sweetened condensed milk. If sauce is too thick stir in water 1 T. at a time until desired consistency. Microwave for 20 to 30 seconds at serving time.  Pour over ice cream....top with nuts, whipped cream and more caramel sauce......YUMMY!  It is great on just about anything!!!

GIFT IDEA – Pour into canning jars and you have an instant gift. 

CARAMEL APPLE NAUCHOS 
Spread sliced apples on plate.  Drizzle with caramel sauce.  Sprinkle with mini chocolate chips. 
HINT:  soak apples in salt/water OR pineapple juice/water solution to prevent them from turning brown. 


SALTED CARAMEL CHEESECAKE
1/2 c. butter, divided in half
1/2 c. sugar
1/2 c. brown sugar
1/2 c. light corn syrup
14 oz. sweetened condensed milk, divided
1 1/2 c. Club Cracker crumbs or Graham Cracker crumbs (I prefer Club)
16 oz. cream cheese
3 eggs
1 t. vanilla
1/2 c. sour cream
Stir together in a 2 qt. glass measuring cup: 1/4 c. butter, sugar, brown sugar, corn syrup and 1/2 c. sweetened condensed milk.  Microwave on high for 2:22 minutes 3 times stirring every 2:22 minutes for a total of about 7 minutes.
Remove caramel mixture from microwave and stir in the remainder of the sweetened condensed milk.  Pour 2/3 c. of this mixture into another bowl and save for topping. Place the rest of the caramel mixture in mixer bowl.
Wrap outside of a 10 inch springform pan with 2 layers of aluminum foil.   In the springform pan mix together the cracker crumbs and 1/4 c. melted butter and pat into bottom of pan forming a crust.
Add cream cheese to the mixer bowl (along with the caramel) and beat on high for 1 minute.
Add eggs, vanilla and sour cream and beat on high for 1 minute.
Pour caramel mixture over the crust in springform pan. Place springform pan in a larger pan filled with 1/2 inch of water and then place in a 325 degree oven and bake for 50 to 60 minutes, until center is set.
Remove from oven and remove springform pan from water. Remove the foil and cool cheesecake on a wire rack.
Refrigerate for at least 4 hours (chill overnight for best flavor). Remove from springform pan to serving platter.  Microwave the reserved caramel mixture for 20 seconds and then pour over the top of the cheesecake. Sprinkle with course Kosher Salt, to taste and serve.


CARAMEL POPCORN
1 c. unpopped popcorn, popped
1 c. light corn syrup
1 c. butter
1 c. brown sugar
1 c. sugar
Cook in saucepan, stirring occasionally and boil for 1 minute.  Remove from heat.
Stir in:  1 t. vanilla
Pour over popped popcorn.  Stir and enjoy!


CARMELLOW CORN.........AKA: KARL MALONE CORN
1/2 c. butter or margarine
1/2 c. brown sugar
3 c. miniature marshmallows
2 qt. popped popcorn
nuts, optional
In 2 qt. bowl, microwave butter & sugar 1 to 2 minutes. Stir in marshmallows. Cook 1 more min. Pour over popcorn (and nuts). Make into balls or serve in bowls.  FAST, EASY, and GOOD!!!

Microwave Peanut Brittle


A fast and easy microwave version of a holiday classic.  My Mom made this every year for Christmas....not sure how we missed getting her recipe in the Cookbook!!    She made it on the stovetop.  This is how I do it but you may have to adjust according to the wattage of your microwave.  Regardless it is worth figuring out.  This is so much easier and faster than standing over the stove stirring and stirring.


  • Microwave Peanut Brittle
  • 1 c. granulated sugar
  • 1/2 c. light corn syrup
  • 1 1/2 c. raw or salted peanuts (I use raw peanuts)
  • 1 T. butter
  • 1 t. baking soda
  • 1 t. vanilla extract
  1. 1) Spray a wooden spoon with cooking spray (makes stirring easier). Butter  baking sheet, or line it with parchment.
  2. 2) Mix together the sugar and corn syrup in a large microwave-safe bowl (I use an 8 cup pyrex measuring bowl) and stir until well combined; the mixture will be stiff and hard to stir. Be sure to use a large enough bowl as this mixture bubbles up during cooking.  
  3. 3) Microwave the sugar mixture uncovered on high power for 5 minutes; it will bubble vigorously.
  4. 4) Add the peanuts and butter, and stir well to combine. Speed is key! The cooler the mixture becomes the harder it will be to stir.
  5. 5) Microwave on high for 2 to 4 minutes, until the mixture turns to a caramel color. Start watching carefully around the 2 minute mark, and remove when the caramel color is achieved.
  6. 6) Add the baking soda and vanilla. Stir quickly. The mixture will bubble furiously when these ingredients are added, giving the candy its airy texture. 
  7. 7) Working FAST! Pour the mixture onto your prepared baking sheet and spread it as evenly as possible. Let cool for about 30 minutes and break into pieces.

Tips

  • Peanuts can be replaced with almost any nut imaginable.  I prefer raw peanuts.  
  • If you want to be fancy, drizzle or dip brittle pieces in melted chocolate.
  • I often do a double batch, the 8 cup measuring bowl will still be big enough.    However, you have to cook it longer.  For the first cooking in step 3 I cook it for 8 minutes, stirring at 4 minutes.  For the second cooking time in step 5 I cook it for 6 to 7 minutes, I stir it after 3 1/2 minutes and then cook 3 1/2 minutes more or until turns caramel color.  These times may very depending on your microwave wattage.  My microwave is 1000 watts.

Peanut Butter Microwave Fudge


Peanut Butter Microwave Fudge
1 lb. box Confectioners sugar 
2 T. butter 
1/3 C. milk 
1 C. peanut butter 
Place sugar, butter and milk in a large mixing bowl. Cook in the microwave 2 minutes on high. Take out, beat ingredients with hand mixer until combined. Microwave 30 seconds more, then add peanut butter and mix by hand or mixer until combined. Spread in foil lined 8x8 pan. Let cool then cut and ENJOY!

2 Minute Fudge....in the Microwave

2 MINUTE FUDGE
1 lb powdered sugar
2/3 cup cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoons vanilla
1/2 cup butter or 1/2 cup margarine
1/2 cup chopped nuts (optional)

Sift powdered sugar, cocoa, and salt into a 1 quart microwave safe bowl. Stir in milk and vanilla. Mix well. Place butter on top. Microwave on high, 2 minutes. Beat with wooden spoon until smooth. Stir in nuts (OPTIONAL).
Spread in 8 X 8 X 2 inch baking pan. Chill about 1 hour or until firm. Cut into pieces.

Snickers Fudge

Snickers Fudge
First Layer:
1 cup milk chocolate chips
1/4 cup butterscotch chips
1/4 cup peanut butter
Second Layer:
4 tablespoons butter
1 cup granulated sugar
1/4 cup evaporated milk
1 1/2 cups marshmallow creme
1/4 cup peanut butter
1 teaspoon vanilla
1 1/2 cups chopped salted peanuts
Third Layer:
14 ounce package caramel cubes
1/4 cup heavy cream
Fourth Layer:
1 cup milk chocolate chips
1/4 cup butterscotch chips
1/4 cup creamy peanut butter

First Layer Prep:
Lightly spray 9×13 baking pan with cooking spray.
Over medium heat, melt milk chocolate chips, peanut butter, and butterscotch chips in small saucepan.
Stir together until completely melted and smooth, then pour into the baking pan. Spread the mixture evenly with a spatula, then refrigerate until set.

Second Layer Prep:
Melt butter over medium-high heat in saucepan.
Add sugar and evaporated milk and bring to boil.
Cook for 5 minutes, stirring constantly.
Remove from the heat and quickly mix in marshmallow creme, peanut butter, and vanilla.
Add peanuts to mixture and spread evenly over chocolate layer.
Refrigerate until set.

Third Layer Prep:
Melt caramels and heavy cream over low heat until smooth.
Pour over peanut mixture and refrigerate until set.

Fourth Layer Prep:
Repeat step one.
Melt chocolate chips, butterscotch chips, and peanut butter over low heat until smooth.
Pour over caramel layer and refrigerate for at least one hour before cutting.

Ol’ Dad’s Dutch Chicken
Breading:
11/2 cups flour
11/2 tablespoons cornstarch
2 teaspoons salt
21/2 teaspoons paprika
11/2 teaspoons sugar 
3/4 teaspoons red pepper powder
1 teaspoon turmeric
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Combine breading ingredients and coat 18 pieces (approximately 4 pounds) split boneless, skinless chicken breasts.  Brown breaded chicken in skillet in 2 tablespoons vegetable oil. When browned, place chicken in 12-inch Dutch oven. Cover and cook over low heat 2 to 3 hours. Check occasionally; if contents are too dry, the pot is too hot. Do not stir. When chicken is tender, serve as desired. (Chicken may tenderize
in pan for approximately 1 hour.)

Slow cooker directions: Place 2 tablespoons vegetable oil in bottom of slow cooker before adding browned chicken. Cook 2 to 4 hours on low heat setting.

Oven directions: Place browned chicken in 9x13-inch pan, cover with foil, and bake 1 hour at 350 degrees.
Makes 18 servings.

Ol’ Dad’s Dutch Potatoes

1 (10.75-ounce) can condensed cream of celery soup (or any cream soup or homemade white sauce)
8 pounds potatoes, unpeeled and sliced 1/3-inch thick
3 medium onions, finely chopped
2 pounds cheddar cheese, sliced or grated
Salt, to taste
Pepper, to taste 
1/2 (1-ounce) packet ranch dressing mix, blended with 2 tablespoons water (mixture should be thick, like condensed soup)
Spread undiluted soup over bottom of Dutch oven. Fill oven 1/3 full with sliced potatoes. Add a layer of 1/3 of the chopped onions; sprinkle with salt and pepper. Add two more layers of potatoes, onions, salt, and pepper; top with ranch dressing mixture.  Place over low heat about 2 hours, being careful not to let potatoes burn; stir every 30 minutes. If potatoes seem dry, the pot is too hot. If potatoes on bottom of pot burn, do not disturb them—the rest of the potatoes may still be enjoyed without tasting the burned ones. When potatoes are tender, cover with ½ of the cheese. When cheese is melted, stir potatoes a final time. Just before serving, add remaining cheese; allow cheese to melt and serve this delicious dish.*

Feeds about 18 adults as a side dish.

*When potatoes are tender, serve within 10 minutes or dish will turn mushy.

Note: One-half or one-third of this recipe may be made in a slow cooker. Grease slow cooker before adding ingredients as listed. Cook 2 hours on high heat setting before adding 1/2 of the cheese, stirring, and then adding additional cheese.


Maddox Rolls    -    The Maddox Ranch House is located in Perry, Utah.
1 tablespoon active dry yeast or instant yeast
1/4 cup warm water
1/4 cup sugar
1/3 cup shortening
1 teaspoon salt
3/4 cup scalded milk* 
1/2 cup cold water
2 eggs, beaten
31/2 cups flour
For regular yeast: In small bowl, sprinkle yeast over warm water; set aside. In separate larger bowl, combine sugar, shortening, and salt; mix well. Add scalded milk, cold water, and beaten eggs; mix about 1 minute, or until well combined. Stir in dissolved yeast. Add flour. Mix four minutes.
For instant yeast: In mixing bowl, combine 2 cups flour, 1 tablespoon yeast, sugar, and salt; mix well. Add shortening, eggs, scalded milk, and 3/4 cup hot water; mix 2 minutes. Add remaining 11/2 cups flour; mix 2 minutes more. (This is a “batter” roll rather than a “dough” roll. Batter will be soft.)
When ingredients are combined, cover bowl; let batter rise in warm place 45 to 60 minutes, or until doubled in size. Stir batter down. Spoon into greased muffin tins, filling 18 muffin cups about 2/3 full. Cover; let rise an additional 45 to 60 minutes, or until double in size.  Bake at 400 degrees 15 to 20 minutes, or until lightly browned. Makes 18 rolls.
*Evaporated milk may be substituted for scalded milk.

Raspberry Butter 
1/2 cup butter
1/4 cup raspberry jam
1/2 teaspoon vanilla
Mix all ingredients together until smooth. Makes about 3/4 cup.

No-Brainer Fruit Salad
10 cups fresh fruit of your choice, such as mangos, strawberries, bananas, and grapes, cut into 1-inch pieces (well-drained canned fruit may be used)
1 cup plain Greek yogurt
2 tablespoons maple syrup (real maple syrup is best)* 
1/2 teaspoon vanilla extract
1 cup chopped nuts (optional)
Place fruit in large mixing bowl. In small bowl, mix yogurt, syrup, and vanilla together. Pour dressing over fruit; toss to coat. May be made the night before.
*Shawn likes a few handfuls of mini marshmallows added because syrup just isn’t sweet enough.
Note: Lasts well in the fridge (as long as no bananas are used) for up to five days. (If you use bananas, add them just before serving.)

Note: To slice grapes easily, line up a row of grapes on your cutting board. Get a rectangle-shaped plastic lid and hold it against one end of the grapes, leaving the other end poking out. Use your knife to cut down the middle. Easy-breezy.

Mormon Muffin Recipe     -    Recipe from The Greenery Restaurant in Ogden, Utah
2 cups boiling water
5 teaspoons baking soda
1 cup shortening
2 cups sugar
4 eggs
1 quart buttermilk
5 cups flour
1 teaspoon salt
4 cups All-Bran cereal
2 cups bran flakes
1 cup walnuts, chopped
Add soda to boiling water and set aside. Whip shortening and sugar until light and fluffy. Add eggs slowly; mix well. Add buttermilk, flour, and salt; mix again. Very slowly add soda water. Gently fold cereals and walnuts into the mix. Spoon 1⁄8 cup batter into greased muffin tins. Bake 30 minutes at 350 degrees. Cool 5 minutes.

Muffin mix must sit in the refrigerator overnight before baking. Mix will last one week, covered and refrigerated.

Yields 3 dozen muffins.

Funeral Potatoes
White sauce:
2 tablespoons butter
2 tablespoons flour
2 cups milk
1/2 teaspoon salt, or to taste 
1/2 teaspoon pepper, or to taste
2 teaspoons chicken bouillon
1 (8-ounce) container sour cream
Casserole:
1 (32-ounce) bag frozen hash brown potatoes, cubed or shredded
1 to 2 cups sharp cheddar cheese, shredded 
1/4 cup French’s fried onions, crushed
2 cups cornflakes, crushed 
1/4 cup butter
Preheat oven to 375 degrees. To make white sauce, melt butter in sauté pan. Add flour and mix until a thick paste forms. Add milk and whisk constantly until sauce thickens. Add bouillon, salt and pepper, and sour cream, and mix well. Remove from heat.
Put potatoes in very large bowl. Add cheese and mix together. Add white sauce mixture and stir until combined. Add onions and mix well.Spread potato mixture into 9x13-inch pan or casserole dish.  Melt butter and combine with cornflake crumbs. Sprinkle buttered crumbs on top of potato mixture.*
Bake until melty and bubbly, about 40 to 60 minutes. If cornflakes begin to brown too quickly, cover with foil.
Feeds 2-16, depending on how much they love it.
*Use less cornflake/butter mixture if desired. If using pre-crushed cornflakes in a canister, use about 1 cup. But it’s best to crush the cornflakes yourself and not worry about the pre-crushed ones. You get a better texture.

Note: For easy white-sauce preparation, mix equal amounts of butter and flour. Drop by tablespoons on wax paper, freeze, and remove to an airtight container. Keep frozen. To make white sauce, put frozen base in a frying pan, using 1 tablespoonful per cup of milk.

Strawberry Pretzel Pie
2 cups finely crushed pretzel sticks (about 8 ounces before crushing)* 
3/4 cup melted butter
3 tablespoons sugar
8 ounces cream cheese
1 cup sugar
8 ounces Cool Whip
1 (6-ounce) package strawberry gelatin
2 cups boiling water
2 (10-ounce) packages frozen strawberries, sliced, with sugar, partially thawed**

Mix the first three ingredients together and press in bottom of greased 9x13-inch pan. Bake 8 minutes at 350 degrees for a metal pan, or 325 degrees for a glass pan. Allow to cool completely.  While crust is cooling, beat together 1 cup sugar and cream cheese until smooth. Fold in Cool Whip. Spread over pretzels, being careful to cover entire crust (or gelatin will make pretzel layer soggy).
Mix gelatin and water until gelatin is dissolved. Add strawberries. Stir until well combined, then set aside for 10 minutes (only 10, or gelatin will start to stick to the bowl) to allow gelatin to thicken slightly. Pour gelatin
mixture over cream cheese mixture. Chill until set, about 3 hours.
*If pretzels aren’t crushed finely enough, crust may be hard to chew.
**One 16-ounce container of fresh strawberries may be used as a substitute for two 10-ounce packages frozen strawberries.

Waffle Mania Waffles
21/4 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
11/2 tablespoons sugar
2 eggs
21/4 cups milk* 
3/4 cup salad oil
Sift together dry ingredients. Combine remaining ingredients; mix well. Just before baking, add flour mixture, beating only till moistened. Batter will be thin. Cook in preheated, greased waffle iron until golden brown.
Makes 4 4-square waffles.

*Substitute up to 1/2 of the milk with buttermilk for a tangy buttermilk waffle.

Note: Our family’s favorite way to eat these: fried diced Spam, whipping cream, and syrup over the top. Yum.

Café Rio-Style Barbacoa Pork
4 lb. pork roast (picnic roast works best)
2 tablespoons brown sugar
11/2 teaspoons cayenne pepper
2 teaspoons cumin
1 teaspoon salt
1 (12-ounce) can Coca-Cola (not diet)
1 cup chicken broth
2 cloves garlic, minced
1 onion, chopped
1 cup brown sugar (more to taste, if desired)
The night before, in a small bowl combine 2 tablespoons brown sugar, cayenne pepper, cumin, and salt. Mix with a fork until blended well. Rub mixture over pork roast. Spray slow cooker with cooking spray, or line with a liner; add rubbed roast. Cook overnight on low heat setting. The next morning, pour Coke, chicken broth, garlic, and onion into slow cooker with pork. Continue to cook on low. One hour before serving, shred roast, and remove any pieces of fat. Add 1 cup brown sugar. Mix well.
Use tongs to remove shredded pork from cooker. Serve over salad or rice, or serve burrito-style with toppings, such as lettuce, tomatoes, rice, sour cream, cheese, etc. Makes 8 servings.

Note: May be made on serving day: Follow directions as indicated but cook 3 hours on high heat setting before adding cola, broth, garlic, and onion. Cook 2 additional hours on high. Shred pork, and add additional brown sugar. If there are a lot of juices after first cooking segment, chicken broth may be omitted.

Cilantro Lime Rice
1 cup uncooked long-grain rice
1 teaspoon butter or margarine
2 cloves garlic, minced
1 teaspoon freshly squeezed lime juice*
1 (15-ounce) can chicken broth
Sauce:
1 tablespoon freshly squeezed lime juice
2 teaspoons sugar
3 tablespoons fresh chopped cilantro
In saucepan, combine rice, butter, garlic, 1 teaspoon lime juice, and chicken broth. Bring to a boil over high heat. Cover, reduce heat to low, and cook 15 to 20 minutes over low heat, until rice is tender. Remove from heat. In small bowl, combine 1 tablespoon lime juice, sugar, and cilantro to make sauce. Pour over hot cooked rice, mixing as rice is fluffed.Makes 2 cups.

*Though fresh limes are always best, bottled lime juice works if it’s what you have on hand.
Note: This recipe works well in a rice cooker. 

Tomatillo Dressing
3 medium tomatillos, husked and washed, but not peeled (leave whole or cut in quarters)
11/2 tablespoons 
(1/2 packet) buttermilk ranch dressing 
1/4 bunch cilantro, chopped
2 cloves garlic, minced or pressed 
1/8 to 1/4 cup lime juice, or to taste* 
3/4 cup buttermilk
1/2 cup mayonnaise
1 teaspoon sugar
1/2 teaspoon seasoned salt
1/2 teaspoon cumin
Mix all ingredients in blender until well blended. Chill and serve over salad. Store leftovers in refrigerator.
Makes 21/2 cups.

*Fresh lime juice is always best, but bottled lime juice will work in a pinch. 

Fry Sauce 
1/4 cup mayonnaise
1/4 cup ketchup
1 teaspoon red wine vinegar
Dash salt
For spicy fry sauce, add: 1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
Mix all the ingredients together. Makes 1/2 cup.

Dream Cookies 
1/2 cup shortening
1/2 cup butter, softened 
3/4 cup granulated sugar
3/4 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla
11/3 cups all-purpose flour 
1/3 cup unsweetened cocoa powder
21/2 cups rolled oats
1 cup semisweet chocolate chips*
1 cup white chocolate chips
1 cup chopped macadamia nuts or pecans
Preheat oven to 350 degrees. Lightly grease baking sheet; set aside.
In large bowl, beat shortening and butter together with electric mixer 30 seconds at medium to high speed. Add granulated sugar, brown sugar, baking powder, baking soda, and salt. Beat until combined, occasionally scraping sides of bowl.
Beat in eggs and vanilla until combined. Beat in flour and cocoa powder.
Stir in oats, chocolate chips, white chocolate chips, and nuts.
Drop by heaping tablespoons or 1-inch scoop 3 inches apart on prepared baking sheet. Flatten dough slightly. Bake 12 to 14 minutes or until just set. Let stand 1 minute on baking sheet. Remove to cooling rack.
Makes 4 dozen.
*Dried cranberries are a good substitute for chocolate chips.
Note: For a flatter, chewier cookie, increase baking powder and baking soda to 1 teaspoon each.

Note: For a less-is-more version of this cookie, cut back to 13/4 cups oats and 1/2 cup nuts.

Granny Annie’s Rocky Road Fudge41/2 cups sugar
1 (12-ounce) can evaporated milk
31/2 cups mini marshmallows, divided (2 cups frozen, 11/2 cups at room temperature)
1 stick butter, cut into tablespoon-size pieces
31/2 cups (21 ounces) chocolate, such as chocolate chips or chopped candy bars*
11/2 teaspoons vanilla
1 cup nuts (any type, but peanuts are traditional)
Put 2 cups of miniature marshmallows in the freezer. Butter a 9x13-inch pan.
In 4-quart saucepan (or larger—mixture will triple in size once it begins to boil) on medium heat, combine sugar and evaporated milk. Bring to a boil and boil for 7 minutes (to soft ball stage), stirring constantly. Remove from heat. Allow to cool 3 minutes. Do not stir mixture after removing it from heat or crystallization will occur.  While the sugar-milk mixture cools, mix together 11/2 cups mini marshmallows, butter, chocolate, and vanilla in large bowl.  Pour sugar-milk mixture in bowl with chocolate-butter mixture (do not stir before pouring in sugar-milk mixture and do not scrape pan). Mix until smooth.
Add nuts and pre-frozen marshmallows. Mix till combined. Pour mixture into prepared pan; smooth top. Allow to cool completely before cutting into 1-inch squares.
*Half milk chocolate and half semisweet chocolate makes a great combination.
Note: Fudge freezes well when wrapped tightly in plastic wrap or placed in an airtight container. Thaw before eating. 

Jam Bars
Crust

11/2 cups flour
1/2 cup quick-cooking oats, uncooked 
1/2 cup sugar
3/4 cup butter or margarine, softened 
1/2 teaspoon baking soda
Topping
3/4 cup flaked coconut
3/4 cup chopped walnuts
1/4 cup flour
1/4 cup packed brown sugar
2 tablespoons butter or margarine, softened 
1/2 teaspoon cinnamon
1 cup strawberry or raspberry jam
Preheat oven to 350 degrees. For crust, in large mixer bowl, combine all crust ingredients. Beat at low speed, scraping bowl often, until mixture is crumbly, 1 to 2 minutes. Using hands, press mixture in bottom of greased 9x13-inch baking pan. Be sure to spray or grease sides of pan as well as bottom. Bake 18 to 20 minutes, or until edges are lightly browned.  
For topping, in same mixer bowl, combine coconut, nuts, flour, brown sugar, butter, and cinnamon. Beat at low speed, scraping bowl often, until well mixed. Crumbling mixture with clean hands works well, too. Spread jam evenly on hot crust, almost to the edges. Sprinkle topping mixture over jam. Continue baking 18 to 20 minutes, or until edges are lightly browned. Cool completely in pan on wire rack. Cut into bars. 
Makes 15 to 24 bars, depending on size cut. Serve warm with ice cream or cool with whipped topping

Snickers Fudge

Snickers Fudge
First Layer:
1 cup milk chocolate chips
1/4 cup butterscotch chips
1/4 cup peanut butter

Lightly spray 9×13 baking pan with cooking spray.
Over medium heat, melt milk chocolate chips, peanut butter, and butterscotch chips in small saucepan.
Stir together until completely melted and smooth, then pour into the baking pan. Spread the mixture evenly with a spatula, then refrigerate until set.
Second Layer:
4 tablespoons butter
1 cup granulated sugar
1/4 cup evaporated milk
1 1/2 cups marshmallow creme
1/4 cup peanut butter
1 teaspoon vanilla
1 1/2 cups chopped salted peanuts

Melt butter over medium-high heat in saucepan.
Add sugar and evaporated milk and bring to boil.
Cook for 5 minutes, stirring constantly.
Remove from the heat and quickly mix in marshmallow creme, peanut butter, and vanilla.
Add peanuts to mixture and spread evenly over chocolate layer.
Refrigerate until set.
Third Layer:
14 ounce package caramel cubes
1/4 cup heavy cream

Melt caramels and heavy cream over low heat until smooth.
Pour over peanut mixture and refrigerate until set.
Fourth Layer:
1 cup milk chocolate chips
1/4 cup butterscotch chips
1/4 cup creamy peanut butter
Repeat first layer.
Melt chocolate chips, butterscotch chips, and peanut butter over low heat until smooth.
Pour over caramel layer and refrigerate for at least one hour before cutting.

Peanut Butter Balls

No Bake Peanut Butter Balls

18 oz. jar of creamy or chunky peanut buter - I prefer creamy
16 oz. bag of confectioners sugar
1/4 c. butter, melted
chocolate almond bark or chocolate candy melts or 12 oz. semi-sweet chocolate chips & 2 tsp. shortening

In a large bowl, stir together the peanut butter, confectioners sugar and melted butter until the mixture is crumbly.
Line a baking sheet with foil. Roll the peanut butter filling into 1 inch balls and line the baking sheet with rows of the balls. Set the baking sheet in the freezer for 5-7 minutes to chill the peanut butter balls for easier dipping.
While the peanut butter balls are chilling, melt the chocolate in the microwave in a microwave safe bowl that is deep enough for dipping.
Remove the baking sheet from the freezer. Insert a toothpick or wooden skewer into a peanut butter ball and then dip it into the chocolate, turning quickly to cover the entire candy. Place onto a second baking tray that has also been lined with foil. Swirl the chocolate on the top of each candy for a pretty design. Refrigerate until the chocolate had completely dried.

Reeses Peanut Butter No Bake Bars

REESES PEANUT BUTTER NO BAKE BARS
1 c. butter, melted
2 c. graham cracker crumbs
1/4 c. brown sugar
1 3/4 c. powdered sugar
1 c. peanut butter
1/2 t. vanilla
11 oz. bag milk chocolate chips

Combine all ingredients, except chocolate chips in a medium sized bowl. Stir until the mixture is smooth and creamy.  Pour peanut butter mixture into a 9 x 13 pan.
Melt chocolate chips in the microwave (at 50% power) for 1-2 minutes, stirring often. Spread chocolate over the peanut butter mixture.  Refrigerate until set, about one hour. Cut  & serve. Enjoy!

Lemon Meringue Pie Fudge

    Lemon Meringue Pie Fudge
    For the Crust:
  • 1 1/2 cups cookie crumbs (shortbread, lemon shortbread, or lemon cookies - I used 1 package of lemon shortbread cookies)
  • 3 tablespoons butter, melted*
  • For the Fudge:
  • 4 cups (2 bags) white chocolate chips, divided
  • 1 can sweetened condensed milk
  • 1 teaspoon pure lemon extract
  • 2-3 drops yellow food coloring, if desired
  • 3/4 cup marshmallow fluff
  1. Mix cookie crumbs and butter and press into an 8x8 or 9x9 pan that has been coved with foil and sprayed with cooking spray. Bake at 350 degrees for 15 minutes. Let cool while you prepare filling.
  2. Place one cup of white chocolate chips in a small bowl. Set aside.
  3. Place remaining 3 cups of white chocolate chips in a medium saucepan. Add the sweetened condensed milk and heat over medium-low heat, stirring, until melted.
  4. While you are cooking the chips and SCM in the pan, place the bowl of chips in the microwave and heat, on 50% power, for about 1-2 minutes, stirring each 30 seconds.
  5. Once the chips and SCM in the pan have melted, remove from heat and stir in lemon extract and food coloring. Pour over crust.
  6. Working quickly, stir fluff into the white chocolate chips you melted in the microwave. The chocolate will seize a little, but that’s okay. If needed, microwave an additional 15 seconds to help the mixture stir together. Drop chunks of the fluff mixture on top of the lemon fudge and use a knife or offset spatula to swirl into the top. Cool on counter for about 10-15 minutes and then chill until set. Slice and serve.
Notes
I used lemon shortbread cookies with a high butter content. Therefore, I didn’t need very much butter to get them to bind together. If you use a cookie that isn’t as buttery, you may need an extra tablespoon or two of butter. When you mix the crumbs and butter, the mixture should press together easily in your hands. If it falls apart, add a little more butter.

Easiest PB Fudge

Easiest PB Fudge
2 cups sugar,
1/2 cup milk (or use half and half)
1 tsp. vanilla,
3/4 cup peanut butter.
Bring sugar and milk to a boil. Boil two and a half minutes. Remove from heat and stir in PB and vanilla. That's it!!


I need to remember to share this with my neighbor, DiAnn.  She loved the fudge I made at Christmas and she asked if I had a PB Fudge recipe....I told her when I found one I would let her know.

Christmas Party Food......

Last night was the Gem County Garden Club Christmas Party.  Yes, we had too much great food and everyone wanted everyone else's recipe.....so, here they are.

NILLA Turtle Cookie Balls          Lacey Bayes    Bakerschocolate.com and Ziploc.com1 pkg (8 oz) Philadelphia cream cheese – softened
70 Nilla wafers – finely crushed (about 2-1/3 cups)
3 Tablespoons caramel ice cream topping
2 pkgs (8 squares) Baker’s Semi-Sweet Chocolate – melted
¼ cup chopped Planters pecans
Mix first 3 ingredients until well blended. Shape into 42 (1-inch) balls – FREEZE 10 minutes. Dip balls into melted chocolate, place in single layer in shallow waxed paper-lined pan. Sprinkle with nuts. Refrigerate 1 hour or until firm. 

HINTS FROM LACEY – reduced-fat cream cheese is just as delightful, white chocolate/vanilla bark is a nice substitution. Use a plastic fork with the middle tines broken out to dip balls in chocolate – makes for nicer-looking end product. 


BEER BREAD
JoAn Rice – Bread in a hurry!!!!
3 cups of all purpose flour (I use whole wheat)
4-1/2 teaspoons baking powder
1/3 cup – or less of sugar
½ teaspoon salt – you can use less
1 12-ounce can/bottle of beer – Jan uses Miller Genuine Draft

Heat oven to 350 degrees F. Mix all dry ingredients together in a medium sized bowl – add beer – stir (the smoother the mix, the less dense the bread. Pour mixture into buttered loaf pan and bake 45 minutes – remove bread from over and brush with butter. You can also sprinkle sesame seeds, etc. on it at this time. Return to oven and bake for 15 more minutes – Remove to rack to cool. JoAn has also deleted ½ cup of all purpose flour and added ½ cup flax seed – Very FORGIVING recipe. ENJOY!!! – Jan Irving & JoAn

KIM BAUER’S TRASH MIX – GREAT SNACK
1 box corn chex 1 bag pretzel stix or your choice
1 box white cheddar cheesets – or -- 
1 bag butter crackers Nuts if wanted
Place these ingredients in a 13 gallon trash bag – mix gently.
Coating – 
2 cups canola oil 2 pkgs dried ranch dressing
Crushed red pepper (to taste) 
½-1 tsp garlic/pepper seasoning
Mix this coating together and pour into trash bag of “chex” mix – rotate bag every hour to distribute seasonings. Eat – Enjoy (from my sis -- Sharon Bauer)


OVEN CARAMEL POPCORN  (Jan Irving) 
Recipe from Marilyn Riffie/Christmas Sharing note/2010 – wonderful corn

5 quarts popped corn                              2 cups brown sugar
1 cup butter                                           ½ cup corn syrup (I use light)
1 teaspoon salt                                      ½ teaspoon baking soda

Pour the popped corn into a large roasting pan.  Combine sugar, butter, syrup and salt in a heavy saucepan and boil 5 minutes – stir constantly to avoid burning.  Remove from heat and add the baking soda, stir.  Pour syrup mixture onto popped corn and stir till corn is coated well.  Bake at 250 degrees for 1 hour (I stirred mine every 20 minutes).  Spread baked caramel corn on waxed paper-covered cookie sheet and carefully break into serving pieces as it cools.  Store in tightly sealed container.
