1 teaspoon chili powder
1/2 teaspoon garlic powder
1 can (about 4 ounces) chopped green chiles

2 cups cubed cooked chicken
4 flour tortillas (8-inch) or 6 corn tortillas (6-inch), cut into strips
1/2 cup shredded Cheddar cheese (I use 1 cup or more)

Stir the soup, water, chili powder, garlic powder, chiles, beans, tomato paste, red pepper, chicken and tortillas in a large bowl.
  • Spoon the chicken mixture into a 2-quart shallow baking dish.  Top with the cheese.  (I add the cheese after it has baked).  Cover the baking dish.
Bake at 350°F. for 25 minutes or until the mixture is hot and bubbling.

Lemon Loaf

Have you noticed that cake mixes are getting smaller??  I have a Lemon Pound Cake recipe that I have made since I was a little girl.  But now that cake mixes are only 15 or 16 ounces instead of 18 ounces it just isn't quite the same.  I think this recipe just might be the answer to that problem???

Lemon Loaf
1½ cups flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
3 eggs, room temp
1 cup sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
2 teaspoon lemon extract
⅓ cup lemon juice
½ cup oil
zest of one lemon

Glaze:
1 cup powdered sugar
2 tablespoons whole milk
½ teaspoon lemon extract
Glaze – whisk all ingredients to combine.

Preheat oven to 350. Grease and flour a 9 × 5 loaf pan. In a large bowl, combine flour, baking soda, baking powder and salt. In a medium bowl, combine eggs, sugar, butter, vanilla extract, lemon extract and lemon juice with a mixer until blended.

Pour wet ingredients into the dry ingredients and blend until smooth. Add oil and lemon zest and mix well. Pour into loaf pan and bake for 45 minutes until toothpick comes out clean. (It took an hour in my oven). Remove from oven and pour glaze over it, then cool in pan on a rack.

Want breakfast to be ready when you wake up?   ♥ ~here's how to make that happen~ ♥

Place in the bottom of your crock pot:   2 sliced apples, 1/4 cup brown sugar, 1 tsp cinnamon, and a pinch salt.
Pour in 2 cups of oatmeal, 2 cups of milk and 2 cups water.
Do NOT stir.
Cook overnight for 8 - 9 hours on low.

Make you own Mixes.....

A Pinterest find......
Make your own Ranch, Dry Onion Soup Mix and Taco Seasoning and store in small mason jars.

Taco Seasoning:
1/2 cup chili powder
1/4 cup onion powder
1/8 cup ground cumin
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon sea salt
Put ingredients into a jar and shake.

Dry Onion Soup Mix:
2/3 cup dried, minced onion
3 teaspoons parsley flakes
2 teaspoons onion powder
2 teaspoons turmeric
1 teaspoon celery salt
1 teaspoon sea salt
1 teaspoon sugar
1/2 teaspoon ground pepper
Mix all ingredients in a jar, then give the jar a good shake. I’d recommend shaking the jar to mix the ingredients well before each use.
Use 4 tablespoons in a recipe in place of 1 packet of onion soup mix. Store this in a dry, cool place.

Ranch:
5 tablespoons dried minced onions
7 teaspoons parsley flakes
4 teaspoons salt
1 teaspoon garlic powder
Mix together and store in an air tight container.
For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.
Mix up a few hours before serving, so the flavors all blend.

Kneaders Sugar Cookies

I found this recipe online....supposedly this is the recipes used by Kneaders....the new bakery deli that recently opened in Meridian????  The neat thing about this recipe is that the dough does not have to be chilled.

Kneaders Sugar Cookies
2 cups butter
2 ¼ cups sugar
4 large eggs
1 cup milk
7 ¾ cups flour
1 tsp baking soda
1 tsp baking powder
½ tsp lemon flavor ( I used 1/4 tsp lemon extract)
½ tsp salt
¼ tsp nutmeg
1 Tbsp honey
1. Cream together butter and sugar until fluffy.
2. Add eggs, then milk.  Scrape the sides of the bowl often.
3. Stir in remaining ingredients.  Dough will be soft and sticky.
4. Place dough on well floured pastry cloth or workspace.
5. Knead in just enough flour to make dough workable.  Dough will be very soft.  It is best to knead with a rolling motion so you have a smooth surface and you will not get cracks on the tops of your cookies.
6. Gently roll out to 3/8 inch thick.
7. Cut into desired shapes and place on baking sheet lined with parchment.
8. Bake at 325 for 10-12 minutes (12 minutes was perfect for me) or until just the edges barely start to change colors. Makes approx. 4 dozen.

Icing
4 ½ cups powdered sugar
4 Tbsp corn syrup
3 Tbsp milk
¼ tsp lemon flavor
1. Mix together all ingredients until smooth.
Dip cookie in icing and smooth with side of palm of hand.  Let set.  Decorate with icing, chocolate chips, candy, coconut etc.
Or use your own favorite frosting.....

Easiest PB Fudge

Easiest PB Fudge
2 cups sugar,
1/2 cup milk (or use half and half)
1 tsp. vanilla,
3/4 cup peanut butter.
Bring sugar and milk to a boil. Boil two and a half minutes. Remove from heat and stir in PB and vanilla. That's it!!

I need to remember to share this with my neighbor, DiAnn.  She loved the fudge I made at Christmas and she asked if I had a PB Fudge recipe....I told her when I found one I would let her know.

Better than Fries!

One Cookie!

FOR THOSE DAYS WHEN YOU JUST WANT TO MAKE.......

ONE COOKIE!
1 T. butter melted
1 T. sugar
1 T. brown sugar
3 drops of vanilla
 pinch of salt
1 egg yolk
1/4 c. flour
2 T. chocolate chips
MICROWAVE 40-60 seconds in a cup or bowl, for a single serving deep dish chocolate chip cookie!
a recent facebook post I liked.....and want to try??
If you like Tex-Mex these are a great change from the normal taco/burrito line up so give them a shot!

Chalupa-Tostadas
1 pound ground beef
1/4 onion, diced
2 Tablespoons olive oil
1 Tablespoon chili powder
2 Teaspoons cumin seeds (I left mine whole but you could toast them and grind them if you wanted)
1 Teaspoon hot paprika
1/2 Teaspoon cayenne
Pinch of salt
Chalupa Shells (recipe follows)
Additional Toppings:
Grated cheese
Shredded lettuce
Diced tomatoes
Sour cream

Start out by adding your oil to a large pan over medium-high heat. Once your oil is hot, add your onions and let them cook for minute or two until translucent. Then add all your spices and stir. Cooking your spices for just a minute or two before you add the beef will really release their flavor. Just be careful to make sure they don’t burn.

Then add your ground beef. Turn your heat down to medium and cook, stirring frequently, until the beef is browned.

While my beef cooked, prep other toppings.

Chalupa Shells
2 1/2 Cups all-purpose flour
1 Tablespoon baking powder
1/2 Teaspoon salt
1 1/2 Tablespoons butter
1 Cup milk
Oil for frying

To make the dough, just add all your dry ingredients to a bowl and stir them up. Then cut in your butter (the original recipe used shortening). I used my fingers to evenly incorporate the butter. Then add your milk and stir it together until the dough forms a ball.

Next, lightly roll out the ball with your hands and divide it into 6 even pieces. Roll each of those into balls and you’re ready to get started frying.

TIP. For the frying part, don’t use a really deep pot or pan. A deep cast iron skillet is perfect for frying these. The reason is that you only want your oil to be about 2 inches deep at the maximum that way you can easily tong your dough and shape it.

So get out your favorite skillet or pan and add enough frying oil (I used canola) to come a few inches up the side. You want your oil to be 350 degrees. When frying, I highly recommend a deep fry thermometer. If too hot or too cold, you’re shells just won’t fry up correctly.
While your oil is heating up, lightly flour a clean surface and roll out a ball of dough to roughly a 6 inch diameter circle. Make it as round as possible.

When your oil is hot, gently slide the dough into the hot oil. It should float immediately and start to puff up!
Each shell will only take about 2 minutes to cook. You have two choices. You could just fry it for about a minute on each side, turning it with tongs a few times to make sure it cooks evenly. That’s the easy way to do it and would give you kind of a chalupa tostada base that you could pile toppings on.

If you want a real shell though, this is what you have to do:

1) Let the dough fry for about 30 seconds on one side.
2) Use tongs to flip the dough over.
3) After you flip the dough, use the tongs to gently fold the dough in half. Hold the dough in that shell shape with the tongs for about 30-45 seconds on one side.
4) Roll the shell shape over to the other side to cook it evenly.

You can keep these in a warm oven (200 degrees) while you fry off the rest of the shells and then everybody can eat at the same time.

These are larger than normal taco shells so you can really pile them high and deep with fillings!

Whether you actually make the shells or just make flat tostadas to pile stuff on, chalupas are a definite win.

Note:   Makes 6 shells, I recommend doubling it.

Homemade Tortillas

Last week at our Presidency Meeting, Rita Crawforth shared this recipe with us.....Rita was taught to make these by a little Spanish lady friend.

Homemade Tortillas
2 c. flour
1/2 t. baking powder
1/4 c. shortening
1 t. salt
1/2 to 3/4 c. warm water
Mix all but the water with hands until well blended, then add water, kneading until a dough is formed-not too sticky.  Continue to knead on the counter- no flour should be needed.  Now make the dough into a fat snake.  Then pinch off little balls, I like mine about the size of a golf ball.  Roll the ball a few times & then set in a row.  Lightly sprinkles the balls with flour to keep them from drying out (I just cover mine with a towel).  Let sit for 15 to 20 minutes.  Heat skillet or frying pan over medium heat.  Roll tortillas out thinly on an unfloured surface, using a rolling pin or a dowel the size of a broom handle is easier to work with and lighter. Cook on the frying pan until little bubbles can be seen through the tortilla.  Flip once.  Eat warm or let cool completely before storing them in an airtight contain in the fridge or freezer.  Makes 6 to 8 tortillas.

Easter Ham....

HaPpY EasTeR!!  I cooked one of our home grown Hams for Easter Dinner today....it turned out great!!!

Easter Ham
6 to 8 lb. Ham
Mix together in large roasting pan:
1 cup orange juice
12 oz. can 7up
1 c. brown sugar
1/2 c. white vinegar
1 t. dry mustard
1 t. ginger
Place ham in roaster and pour marinade over ham to baste.  Cover and bake at 300 (1/2 hour/lb.).  Baste occasionally during baking.
Make this dipping sauce while ham is baking.
Stir together in saucepan:
1 egg
5 T. water
5 T. vinegar
Add:
1/4 c. sugar
1 T. flour
1 T. dry mustard
1/4 t. celery seed
1/4 t. salt
1/4 t. pepper
Cook & stir over med. heat until thick.  Cover with lid and set aside to cool to room temperature.
Beat 1/2 c. whipping cream until stiff peaks form
When egg mixture is cooled fold in whipped cream.  Chill and serve with ham.

I made a few adjustments to my recipe above.... from the Pinterest recipe.....I like how it turned out!!!  I liked the dipping sauce and think it would make a great sandwich spread too.  I also cooked a turkey today and it was good on the turkey too.  The ham had great flavor and I think next time I will allow the ham to marinate in the marinade for a few hours or overnight.  I will definitely do this again.  The sauce is good but not totally necessary.  I started baking this at 300....after about an hour I turned my oven up to 325 and then the last hour I turned it up to 350.  My ham weighed just under 7 lbs. and it took almost 3 1/2 hours to bake. I think the lower temperature would be best but I needed it to get done sooner than that.

Homestyle Chicken Noodle Soup....for a crowd

I usually just dump in whatever I think of but since I am making 8 to 10 gallons of this for the Women's Conference on the 16th I thought I should write down a recipe to follow.  So yesterday I tried it out and here it is:   (feel free to make adjustments according to your tastes)

Homestyle Chicken Noodle Soup........for a crowd (about 1 1/2 gallon)
1 Gallon water or chicken broth
1/4 c. chicken bouillon
1 c. chopped onion or 1/2 c. dried
11/2 c. chopped carrots
1 1/2 c. chopped celery
2 t. granulated garlic
1 t. thyme flakes
1 to 2 t. salt
1 t. pepper
1/2 c. chicken gravy mix
2 - 3 T. parsley flakes
3 - 4 c. shredded cooked chicken
16 oz. homestyle country egg noodles (I made homemade egg noodles, but I only made 1 gallon of soup)
Place all ingredients in a roaster oven or crockpot, depending on how much you need to make.  Once the noodles are done turn the heat down to lowest setting.  If you will be cooking it for a long time you might want to wait to add the noodles, so they don't go mushy.

Keebler Cracker Cookies

I had Joey & Tonya Keene over for dinner last week to celebrate our birthdays!!  We were in the hospital together when we were born.  So we try to do something close to our birthdays each year.  It is a great tradition!!  Usually her & I just go to lunch someplace, but this year I thought it would be fun to include the husbands with us.  We had a blast, talking & laughing about old times!  Tonya brought a plate full of these fun little cookies.  They are so delicious.....yes, I ate most of the plateful and requested the recipe.  Here it is:

Keebler Cracker Cookies
1 c. sliced toasted almonds
1 sleeve Keebler Club Crackers (original)
Place crackers in a single layer on a foil lined cookie sheet.
1/2 c. butter
1/2 c. sugar
1 t. vanilla
Melt the butter and add the sugar.  Cook on medium heat until it boils, then cook for 2 minutes stirring constantly.  Remove from heat and stir in vanilla.  Pour mixture over the crackers and smooth out so all crackers are covered.  Sprinkle with toasted almonds.  Bake at 350 for 8 minutes or until golden in color. Remove from oven and move to cooling racks to cool.  YUMMY!!!

Log Cabin Day 2013......

Well Log Cabin Day, Feb.18, 2013 was a big success!  Diane Beagley gave the most amazing pie class ever!!  I am still in awe and need to find an extra hour to try out these new recipes Diane shared with us.

Pie Making 101 tips shared by Diane.....

There are 2 things people do wrong when making pie crust.
#1 they use TOO much flour
#2 they over mix the crust  - the only mixer you need is your hands!!

Roll your dough directly on your counter.  Pat your hand in flour and then spread that flour over your counter.  Pat your hand in flour and rub it on your rolling pin.  That is ALL the flour you need until you turn your dough and then you will flour your counter and rolling pin one more time.

Always roll your rolling pin forward and back.  Never side ways, never at an angle as the pressure is different and then the dough will not be the same thickness.

Once dough is rolled out fold in half and then half again.  Transfer dough to your pie tin.

For a single crust pie = turn pie tin upside down and form the dough over the outside of the pan.  Trim any excess dough with the back of a butter knife.  Prick the bottom with a fork all over.  Bake.  Cool and place another pie tin over the crust and turn over....now the crust is inside the pan.  You can stack these in your freezer for later use.

To tell if your pie is done = pinch the pie pan between your thumb and index finger. Gently shake pan side to side.  If the crust is done it will release from the pan and spin.  It will only spin if it is done and only while it is hot from the oven.  This even works on a double crust filled pie.

For a double crust pie you form the dough in the bottom of the pie tin.....DO NOT prick it as the filling will run out.  Do not over fill the pie.  The filling should be level with the top unless you are using fresh fruit that will cook down.  Once you have rolled out the top crust you can use cookie cutters to cut out vent holes or fold the crust and clip it with scissors.  Rub the edge of the bottom crust with water.  Then place top crust  on top of the filling.  Trim excess dough with the back of a butter knife.  To crimp the edges....hold left index finger against pan...with right thumb gently lift the crust while pinching  dough between thumb and index finger and twisting the dough.  OR simply press edges together with a fork to seal crust edges.

Double crust pies are best if brushed with milk and sprinkled with sugar prior to baking.

If your double crust filled pie is frozen when baking it will take 15 to 25 minutes more to bake.

Diane said to bake pies on the bottom shelf of your oven......but I am pretty sure that is not the case in my oven....because it burns everything that is in the bottom half of the oven.  Mine came out fine when I baked them where I bake everything else.

On our cruise this was one of our favorite desserts.....here's a couple recipes that look pretty close....gonna try it soon! For the sauce...I will use my 6 minute Caramel Sauce recipe....yes I've adapted it once again!!

Bread & Butter Pudding with Caramel Sauce
3/4 cup unsalted butter, creamed well
20 slices white bread, with crusts
2 cups granulated sugar
2 tablespoons granulated sugar, for sprinkling over bread
1/2 teaspoon cinnamon
1 vanilla beans, split or 1 tablespoon vanilla extract
6 cups whole milk
6 large eggs
4 large egg yolks
1/2 teaspoon salt
Caramel Sauce
1/4 cup butter
1 1/3 cups granulated sugar
2 1/2 cups half and half milk

Preheat the broiler.
Butter one side of each slice of bread and toast them with the buttered side up. Watch carefully as not to burn.
Stand bread slices upright to cool-- do not stack as they will stick together-- When toast is cool and dry, trim off crusts and cut into triangles.
Arrange in a deep 10 inch cake pan, in a spiral overlapping, with the points up. There will be an empty space in the center.
Sprinkle with the 2 tbsp sugar and the cinnamon. Set aside.
Split the vanilla bean and scrape the seeds into the milk in a saucepot, over medium heat.
Note: If using extract, do not put it in the milk here, scald the milk alone.
In a large bowl, beat the eggs, remaining sugar, salt and vanilla extract if been used, until smooth and lemon colored-- about one minute.
With mixer on low, and in a stream add the scalded milk-- now remove the vanilla bean.
With a ladle pour as much of this custard into the centre of the cake pan, careful not too overflow-- let stand and keep adding more, as its been soaked in.
Bake in a hot 400°F oven in a hot water bath-- for about 40 minutes until pudding is firm and puffed and golden brown-- Remove and place on a rack to cool.
Sauce-- Put butter in a pot, and pour in the sugar.
DO NOT STIR Over medium heat allow sugar to caramelize slowly--should take 10 minutes or so.
Stir when mixture is a nice brown colour and bubbling.
Continue until its a dark golden brown-- Stir in small amounts of the cream, it will harden up-- but then will go back to a liquid, or a thick syrup-- Strain through a sieve, and keep hot in a warm water bath, until needed.
To serve-- cut the cake into ten portions, as you would a pie-- using a knife and a pie lifter to remove, as not to loose any custard-- Pour some sauce over each.
