Stuffed Cherry Tomatoes
30 cherry tomatoes (sun sugar are my favorite)
8 oz. cream cheese, softened
1/4 c mayonnaise
1/2 c. finely chopped peeled cucumber
2 T. finely chopped chives
1 t. dried dill
1/2 t. granulated garlic
1/4 t. salt
1/8 t. pepper
Cut a thin slice off the top of each tomato. Scoop out the pulp: invert tomatoes on paper towels to drain.
In mixer bowl combine the cream cheese and mayo. Beat until smooth. Add the remaining ingredients.
Pipe into tomatoes with a large open tip and pastry bag. Chill until serving.
A tasty dip too.
